"Sour golden saison aged in Barr Hill Tom Cat Gin barrels. Tom Cat Gin uses juniper as its sole botanical, is backsweetened with estate honey, and ages in new American oak. We wanted to let the flavors of this amazing gin shine so we age a pale base for 8-12 months and use our house mixed culture to ferment. The fruitiness of our yeast compliments the floral honey nuances and vanilla character from toasted new oak to create an utterly complex and unique beer."
