Brett Ale with Chamomile, Rose Hips and Elderflower.
It is a mixed fermentation ale that uses Belgian farmhouse yeast for primary fermentation and is then aged with brettanomyces (Brett) for seven months. When the Brett has sufficiently contributed its character and final fermentation is complete, the beer is aged further with flowers added for layered complexity and nuance. The result is bright and elegant, delicate but vivacious. Delicious for any occasion.
